"The Stack"

This dish is called "The Stack" because it's inspired by my favorite dish at HG Supply Co (a health-conscious Dallas restaurant) with the same name! Its such an easy throw-everything-together dish, but I never get tired of it. I could have it for really any meal of the day too!

Ingredients:

  • 1 pound organic grass-fed ground beef

  • 2-3 large organic sweet potatoes

  • 4 cups organic greens (I used kale here!)

  • 2 organic avocados

  • 8 ounces organic tomatoes

  • 4 organic cage-free eggs

  • 2 tbsp avocado oil

  • seasoning: 2 tsp sea salt, 1 tsp pepper, 2 tsp garlic powder, 1 tsp paprika

  • optional: trader joe's everything but the bagel seasoning or salsa to garnish

Instructions:

  • First, prep your sweet potatoes. Peel and chop them into small bite-size squares. Season with 2 tbsp avocado oil, 1 tsp sea salt, 1/2 tsp pepper, 1 tsp garlic powder, and 1 tsp paprika.

  • Preheat oven to 425ºF and bake for 35-45 minutes or until desired crispness. If using an air fryer, preheat to 390ºF and cook for 20 minutes. Make sure to open the air fryer every 5 minutes or so and shake around the potatoes to ensure they are evenly cooked.

  • Now cook the ground beef. Heat a skillet on med-high heat and season the ground beef with 1 tsp sea salt, 1/2 tsp pepper, and 1 tsp garlic powder. Now, brown the ground beef until no pink is visible (or cooked through). Set aside.

  • Cook your eggs over easy/medium or however you please in whatever cooking oil you'd like. Avocado oil works well!

  • Dice up your avocado and tomatoes and set aside.

  • Put your bowls together. Start with a base of greens, then add the sweet potatoes and ground beef. Top with the tomatoes, avocado, and egg. Garnish with trader joe's everything but the bagel seasoning or salsa if desired. Enjoy!
