Avo-Tuna Salad


Prep Time: 10 minutes | Yield: 2 avo-tuna salad halves

This is a great power lunch idea! Tuna salad stuffed in an avocado - healthy fats and protein that will get you through the afternoon without an energy crash. Plus, it's super simple & fast to make and/or meal prep!

INGREDIENTS:
  • 1 can wild tuna

  • 1 tbsp Primal Kitchen Foods mayo

  • 1 ripe organic avocado

  • Sea salt + pepper to taste

  • Optional: garnish with tomatoes

INSTRUCTIONS:
  1. First, cut the avocado in half and remove the pit. Scoop out a little more out of the center to make room for the tuna salad.

  2. Drain the water out of the canned tuna and then mix thoroughly with the mayo.

  3. Place in the center of both avocado halves and top with sea salt and pepper to taste. Enjoy!
