Fajitas


Prep Time: 10 minutes | Cooking Time: 10 minutes | Yield: 4 fajitas

I absolutely love Mexican food! It is a bit of bummer that I can't have dairy though because grated cheese and/or queso would really add some great flavor to this dish - but honestly it's super tasty as it is!

I also love that this is a quick meal, perfect for busy week nights :)

INGREDIENTS:

  • 4 oz organic precooked grilled chicken strips

  • 4 Siete Foods almond flour tortillas

  • 1 green and 1 red bell pepper, sliced

  • 1 white onion, thinly sliced

  • 1-2 cups homemade guac

  • ​​1 organic avocado smashed, 1 tsp lime juice, sea salt, pepper, and garlic salt to taste.

  • Handful of freshly chopped cilantro

  • Avocado oil spray

  • Seasoning for the chicken: Frontier Co-Op Mexican Fiesta Seasoning

INSTRUCTIONS:
  1. Make the homemade guacamole and set aside.

  2. Chop up the bell peppers and onions.

  3. Heat up a skillet on med-high heat and spray with avocado oil spray. Place the chicken, bell peppers and onions in, add about 2 tsp of seasoning, and cook until softened.

  4. Place some guac on a tortilla, then the bell pepper/onion/chicken mix and enjoy!
