Prep Time: 20 minutes | Cooking Time: 10-15 minutes | Yield: ~2 servings
2 cups cauliflower rice (premade from Costco)
1 cup organic frozen peas & carrots
4 organic, cage-free eggs
4 oz precooked grilled chicken strips
2 tbsp organic onion, diced
3 garlic cloves, minced
1 tbsp sesame oil
1/4 cup coconut aminos
Sea salt and pepper to taste
A pinch of garlic salt
Dice up the garlic and onions. Heat up a skillet on med-high heat and add in the sesame oil. Once it heats up a bit, throw in the garlic and onions. Cook for a couple minutes until slight browned.
Now add in the frozen carrots and peas. Cook until they are softened.
Push everything to the outsides of the skillet making a little well or hole in the middle. Crack the 4 eggs into the center and scramble. Mix everything together well.
Add in the cauliflower rice and chicken. Cook for about 3-5 minutes until the cauliflower rice is slightly browned. Season with sea salt, pepper, and garlic salt to taste. Enjoy!
