Paleo Banana Pancakes/Waffles


Prep Time: 5 minutes | Cooking Time: 10 minutes | Yield: 1 waffle or 2 pancakes

This recipe was inspired by Rachael's Good Eats - I saw it on her Instagram feed and couldn't help myself from trying it out!

You can use this recipe to make either pancakes or waffles.

This recipe calls for cassava flour - I would advise sticking to this rather than using an alternate flour - it just doesn't make it has "fluffy". I definitely think this is the magic ingredient!

Some perks abouts the ingredients:

Almond milk is a great source of healthy fats with high vitamin D content. Unsweetened almond milk doesn't raise blood sugar, which could lead to weight gain.

Eggs are a great source of high quality, inexpensive protein. They also contain selenium, vitamin D, B vitamins, zinc, copper, and iron.

INGREDIENTS:
  • 1/2 banana (green-tipped will be better for blood sugar)

  • 1/2 cup unsweetened almond milk

  • 1 organic, cage-free egg

  • 1/2 tsp vanilla

  • 2 scoops Vital Proteins collagen (optional)

  • 1/2 tsp cinnamon

  • 1/3 cup cassava flour

  • 2 tbsp ground flaxseed

  • 1/2 tsp baking powder

INSTRUCTIONS:
  1. Blend all of the ingredients together.

  2. If making waffles, spray a hot waffle iron with avocado oil spray (if not non-stick) and drop the batter in to cook, unless your waffle iron is non-stick!

  3. If making pancakes, heat a skillet up on med-high heat and spray with avocado oil and drop the batter in (1/4 cup at a time) to cook.

  4. Top with strawberries, blueberries and/or 100% pure maple syrup. Enjoy!

Sugar Control Diet Approved (when using a green tipped banana, top with cashew or almond butter or blueberries - no sweetner or strawberries allowed)
