Caesar salad has always been one of my go-to favorite salads, but since being dairy free I've had to find other alternatives. Well not any more!
I found this recipe on the Autoimmune Paleo Cookbook by Mickey Trescott, NTP and it's the best. Try it out!
INGREDIENTS:
1/4 cup Tropical Traditions coconut concentrate
1/2 cup water
1/3 cup EVOO
2 cloves garlic
1 lemon, juiced (~2 tbsp)
1/4 tsp sea salt
2 anchovy fillets
INSTRUCTIONS:
Put all of the ingredients in a blender and mix well. If the dressing is too thick, add water 1 tbsp at a time until the desired consistency is reached. Enjoy!
