Tuna Melt


Prep Time: 5 minutes | Yield: 2 servings

This is a childhood favorite of mine. Now that I am gluten/dairy free, I've had to change it up a little bit but it still tastes amazing in my opinion!

Although it may look like a small meal, it's very filling. I can't wait to hear your thoughts!

INGREDIENTS:

  • 1 can of light tuna, in water

  • 2 pieces Udi's gluten free bread

  • 3 dill pickles, diced

  • 1/4 cup mayo (Primal Kitchen mayo)

  • Salt and pepper to taste

INSTRUCTIONS:
  1. Open the can of tuna, drain and put into a mixing bowl.

  2. Dice the pickles and mix into the tuna. I prefer a little larger dice, but you can do whatever you prefer!

  3. Mix in the mayo and add the salt and pepper to your liking.

  4. Toast the Udi's gluten free bread.

  5. Place the tuna mixture on top of the toasted bread and enjoy!
