Although I try not to have potatoes or any starchy vegetables too much, this side dish is absolutely delicious (and easy!) It's guaranteed to be a family favorite.
2 medium-sized sweet potatoes
1 head of cauliflower
3 tbsp coconut oil, butter, ghee, or avocado oil
Seasoning (to taste):
Sea salt, pepper, garlic powder and paprika
Preheat oven to 375 degrees F.
Peel the skin off of the sweet potatoes and rinse & dry the cauliflower. Chop up sweet potatoes and cauliflower to about 1/2-inch pieces.
Place the sweet potatoes and cauliflower on the baking sheet, and drizzle the cooking oil over them.
Now add the spices to your liking and mix everything together to evenly disperse the oil and seasoning.
Now readjust the sweet potatoes and cauliflower on the baking sheet, as spread apart as possible.
Bake for 30 minutes or until your preferred crispness. Enjoy!
