Zucchini Bites

These zucchini bites are something my grandma used to make me all the time growing up. I remember CRAVING them and was so confused because it was zucchini of all things!


I wanted to see if I could make a paleo version that still tasted just as good - after trying a couple different things, this super quick and easy recipe did not disappoint. I've had so many people try it off of Instagram and post videos of their kiddos loving it too, so I'm convinced EVERYONE will love these! They are the perfect appetizer, snack, or side dish. Enjoy!


Ingredients:

  • 1 organic medium-sized zucchini

  • 1/2 cup almond flour

  • 2 organic cage-free eggs

  • Cooking oil: I used Chosen Foods avocado oil

  • Seasoning: ~1 tsp each of sea salt, pepper, and garlic powder


Instructions:

  • Slice the zucchini in 1/2"slices and pat down all of the extra moisture with a towel. Set aside.

  • Whisk the eggs together in a bowl for dipping.

  • Mix together the almond flour with the seasonings in a bowl, then pour onto a plate for dipping.

  • Dip one zucchini slice into the egg then the almond flour mixture until well coated. Set aside. Continue doing this will all of the zucchini slices.

  • Heat a skillet on med-high heat and add/melt in the cooking oil.

  • Fry the zucchini slices on each side for 30-60 seconds or until the "crust" becomes a golden brown.

  • Serve immediately and enjoy with some Primal Kitchen Foods ranch!
