Prep Time: 5-7 minutes | "Cooking" Time: 5 minutes | Yield: ~9 balls
INGREDIENTS:
3 tbsp melted coconut butter
2 tbsp organic, grass-fed ghee
1 scoop Vital Proteins collagen peptides
1 tsp vanilla extract
1/2 tsp cinnamon
2 tbsp coconut flour
2/3 cup almond flour
For the topping:
1/2 tsp cinnamon
1/2 tsp coconut sugar (optional)
INSTRUCTIONS:
Melt the coconut butter and ghee in a pot on medium heat, then pour into a bowl and add in the vanilla extract.
Then, stir in the cinnamon, collagen peptides + creamer, coconut flour, and almond flour.
Place in the freezer for about 5 minutes, or until the dough hardens a bit and is easier to work with.
Using a cookie scoop, scoop the hardened dough onto a flat surface and sprinkle with the cinnamon and coconut sugar (if using). You can just use your hands to roll the dough into balls if you don't have a cookie scoop.
Store in an airtight container in the fridge. Enjoy!
