Cashew Butter Cookies


Prep Time: 5-7 minutes | Cooking Time: 10 minutes | Yield: 1 dozen cookies

INGREDIENTS:
  • 2 cups cassava flour

  • 1 cup cashew butter

  • 1/3 melted coconut oil

  • 1 tsp baking soda

  • 3/4 cup maple syrup

  • 2 organic cage-free eggs

  • 1 tsp vanilla extract

  • Dash of sea salt

INSTRUCTIONS:
  1. Preheat oven to 350F.

  2. Blend all of the ingredients together, then form into 12 cookies on a lined baking sheet.

  3. Optional: use a fork to make the crisscross markings on top.

  4. Bake for 10 minutes & then try not to eat them all at once ;)
