Avocado Bruschetta

Prep Time: 5 minutes | Yield: 4 Bruschetta Slices

  • 4 slices of french bread, or Udi's bread (gluten & dairy free), or Barely Bread slices (grain & dairy free)

  • 3-4 organic large tomatoes, chopped

  • 1 organic ripe avocado, smashed

  • 3-4 organic basil leaves, finely chopped

  • 2-3 organic garlic cloves, minced

  • 1 tsp balsalmic vinegar

  • Sea salt and pepper to taste

  1. Toast bread and set aside.

  2. Saute garlic for 1-2 min until slightly browned and fragrant. Set aside in a mixing bowl.

  3. Chop up the tomatoes and basil, add into the bowl with the garlic, season with sea salt and pepper and combine.

  4. Add the tsp of balsalmic vinegar and mix.

  5. Smash up the avocado and layer onto the toast, then put the tomato/basil mix on top and enjoy!
