Prep Time: 5 minutes | Cooking Time: 5 minutes | Yield: 1 quesadilla

  • 2 Siete Foods Almond Flour Tortillas

  • 1/4 cup Daiya Foods dairy free shredded cheddar cheese

  • 1/4 cup organic chicken breast, chopped (I used precooked grilled chicken breast strips from Costco)

  • Avocado oil spray

  • For the garnish:

  • 1/4 cup organic avocado, diced

  • 1 tsp organic sugar-free salsa (Whole Foods)

  1. Lightly spray a skillet with avocado oil spray and place a tortilla in the skillet.

  2. Place a layer of cheese, then a layer of chicken, then another layer of cheese on the tortilla. Finally top it off with another tortilla.

  3. Cook for about 3 minutes on each side or until the cheese is melted.

  4. Garnish with the avocado and salsa. Enjoy!

Sugar Control Diet Approved (without the Daiya Foods cheese, can replace with a hard cheese like cheddar if not dairy sensitive).
