Bacon and Egg Salad


Prep Time: 5 minutes | Cooking Time: 15-20 minutes | Yield: 1 serving

INGREDIENTS:
  • 3 organic, cage-free eggs

  • 3 pieces organic, grass-fed bacon

  • 1 tbsp Primal Kitchen mayo

  • Avocado oil spray

  • Sea salt and pepper to taste

INSTRUCTIONS:
  1. Hard boil the 3 eggs. Place the eggs in a skillet and fill with cold water so that they eggs are fully covered. Bring to a boil and then immediately remove from heat and allow to sit for about 15 minutes. Immediately transfer the eggs into an ice water bath to prevent further cooking and then peel and chop.

  2. Now spray a skillet with avocado spray oil and cook the bacon until your preferred crispness. I like extra crispy! ;)

  3. Break or chop the bacon into bits and mix in with the eggs and mayo. Season with sea salt and pepper to taste. Enjoy!
