I've been having this for lunch almost every day recently! It's such a quick and easy recipe that satisfies my need for bread or some sort of carb that I used to eat all the time haha.
The Siete Foods tortillas that I use are made from either almond, cassava, or coconut flour, which makes them grain free!
Organic turkey is a rich source of protein. It contains iron, zinc, potassium, and phosphorus. Zinc is an essential mineral for immune system support, among other things. Turkey is also a great source of B vitamins, which are essential for energy production within the body.
Cucumbers are a great source of magnesium, potassium, and silicon - all minerals that promote healthy skin. I remember my grandma always peeling off the cucumber skin and giving it to me to wipe onto my face! I always thought it was so odd, but my skin always felt so rejuvenated afterwards - now I know why ;)
INGREDIENTS:
2 Siete Foods tortillas
4 slices organic, sugar-free turkey breast slices (Costco)
6 pieces thinly sliced organic cucumber
2 tsp yellow or dijon mustard
INSTRUCTIONS:
Heat up the tortillas in a skillet on medium heat (only a few seconds on each side).
Layer 1 tsp of yellow or dijon mustard, 2 slices of organic turkey breast, and the sliced cucumber on each tortilla and enjoy! Easy-peasy.
