Homemade Mayo

Prep Time: 10 minutes | Yield: 1 cup

Mayo is a very delicious condiment that can add a ton of flavor to some blander healthy recipes - you definitely want to keep some of this in your fridge at all times!

Making the mayo at home ensures no preservatives, added sugar, etc. so you don't have to feel guilty for eating it all the time and your body will thank you ;)

  • 1 large organic cage-free egg at room temp

  • 1 tbsp mustard

  • 1 tbsp red or white vinegar

  • 1/4 tsp salt or more to taste

  • 1 cup olive oil

  • 1 tsp fresh lemon juice (optional)

  1. Put the egg, mustard, vinegar and salt into a food processor and mix for about 20 seconds.

  2. Scrape the sides and continue mixing on a low setting while slowly adding the olive oil drop by drop. This will allow for the best emulsification (aka no clumps!) As it begins to thicken, you can start to add the olive oil a little bit faster.

  3. Once thoroughly mixed, taste it and add the lemon juice, salt or mustard to your preference.

  4. If the mayo seems a little thin, just continue to add olive oil slowly until it thickens. Enjoy!
