Egg-O-Cado


Prep Time: 3-5 minutes | Cooking Time: 20-25 minutes | Yield: 2 servings

This is such a simple and yummy breakfast. Only two ingredients and some seasoning!

INGREDIENTS:
  • 2 organic, cage-free eggs

  • 1 ripe avocado, halved and pitted

  • Salt and pepper to taste

  • 1 slice sugar-free turkey bacon finely chopped, optional

INSTRUCTIONS:
  1. Preheat oven to 350 degrees F.

  2. Cut the avocado in half and take out the pit. Cut a small portion of the skin off on the bottom of the avocado so that it will lay flat.

  3. Crack open an egg, remove most of the white portion of it and place the yolk in the center of the avocado where the pit was removed. Do this for both halves of the avocado.

  4. Sprinkle with salt and pepper to your preference. If you would like to add the turkey bacon bits on top, add those on now.

  5. Spray the bottom of a baking sheet or use parchment paper or a silpat.

  6. Bake for 20-25 minutes or until the egg is cooked through.
