I've been looking for as many grain + dairy free Mexican recipes as possible because DUH it's the most amazing food! This was definitely a hit.
INGREDIENTS:
2 Siete Foods almond flour tortillas
2-3 organic, cage-free eggs
1/2 organic avocado
2 strips of sugar-free turkey bacon
1 tbsp Daiya cheddar style shreds (Whole Foods)
Avocado oil spray (Costco)
INSTRUCTIONS:
First cook the eggs - spray a skillet with avocado oil on medium heat and scramble the eggs. Set aside and cover to keep warm.
Re-spray the skillet with avocado oil and cook the turkey bacon to your liking - I prefer mine on the crispy side! You can either leave in whole pieces or break apart. Set aside with the eggs and cover to keep warm.
Now put each tortilla on the skillet for 3-5 seconds to warm up (you don't need to spray the pan).
Halve and dice the avocado.
Now put it all together and sprinkle with the Daiya cheese to finish. Enjoy!
