Need something to kick your salt craving and/or after dinner sweet tooth? This treat appeals to both of these - and who doesn’t love a little salty+sweet together?
This is such an easy recipe and takes about 5 minutes tops from start to finish! I got this recipe from The Restart Program - the cookbook that comes with the group classes that I offer!
1 cup coconut flakes, unsweetened
Himalayan sea salt and cinnamon, to taste
Preheat the oven to 350 degrees F.
Place the coconut flakes on a baking sheet lined with parchment paper (or I used a silpat).
Bake for 3-5 minutes, or until the flakes start to turn brown. I would just watch them the entire time they are cooking because it could be sooner based on the strength of your oven.
Remove from the oven and sprinkle salt and cinnamon on the flakes while hot.
Once cooled, mix up the flakes in a bowl and add any additional salt and cinnamon to taste. Enjoy!
