Collagen-Boosted Protein Muffins

Prep Time: 10 minutes | Cooking Time: 25 minutes | Yield: ~15 muffins

This recipe was inspired by Empowered Sustenance! I used Vital Proteins collagen peptides for the added collagen.

Collagen maintains the structure of our joints, bones and skin. If you have arthritis, osteoporosis, or just want natural, younger and tighter looking skin - these are for you!

Also, these collagen peptides can be put in almost anything - they have no taste but so many benefits! (the collagen has no taste that is; the muffins are yummy ;)


  • 2/3 cup arrowroot flower

  • 2/3 cup Vital Proteins collagen peptides

  • 2/3 cup coconut flour

  • 8 eggs

  • 1/2 cup coconut oil, melted

  • 2 tbsp maple syrup

  • 2 tsp vanilla extract

  • 1 tsp baking soda

  • 1 tsp apple cider vinegar

  • 6 tbsp full-fat coconut milk

  1. Preheat your oven to 350 degrees F

  2. Mix all of the dry ingredients together in one bowl and the wet in another.

  3. Now, put all the ingredients together and mix!

  4. Pour the batter into the muffin tins until they are about 3/4 full.

  5. Cook for 25 minutes or until slightly brown on top & enjoy!
