Turkey Meatballs


Prep Time: 10-15 minutes | Cooking Time: 25-30 minutes | Yield: 8 meatballs

INGREDIENTS:
  • 1 pound organic ground turkey

  • 1 (14.5 oz) can sugar-free tomato sauce

  • 1/2 cup filtered water

  • Seasoning for the ground turkey:

  • ​​1 tbsp garlic powder, 1/2 tbsp onion powder, 1/2 tbsp fennel seeds, 1 tbsp parsley, 1/2 tbsp sea salt, and 1 tsp pepper.

  • Seasoning for the sauce:

  • ​​1/2 tbsp garlic powder, 1 tsp onion powder, 1/2 tbsp italian seasoning, 1 tsp oregano, 1/2 tbsp parsley, 1 tsp sea salt, and 1/2 tsp pepper.

  • Optional garnishes: fresh grated parmesan and parsley

  • Pair with lentil or chickpea pasta for a grain-free option or zucchini noodles for a sugar-free option

INSTRUCTIONS:
  1. Preheat oven to 375ºF.

  2. Season organic ground turkey with the blend above and separate roughly into 8 meatballs. They will be a little sticky, don't worry if they aren't "perfectly" ball-shaped, they will still turn out well! Place in a casserole dish with some space inbetween them so they won't stick together.

  3. Now make the tomato sauce by pouring the canned sauce into a pot with the filtered water. Add in the spice blend above for the sauce and mix well. Cover, simmer, and thicken for about 10 minutes.

  4. Pour the sauce over the meatballs in the casserole dish and bake for about 25 minutes or until the internal temperature is 165ºF.

  5. Optional: top with fresh grated parmesan and parsley and pair with any of the "noodle" options above.

Sugar Control Diet Approved (if paired with zucchini noodles or you may try sweet potato noodles if you're active/using a modification)
