This is another family favorite that my mom makes - she literally has to hide them if she's making them for an event so we won't eat them all beforehand!
INGREDIENTS:
6 organic cage-free eggs
1/4 cup Primal Kitchen mayo or homemade mayo
1 tsp mustard
Salt and pepper to taste
Smoked paprika to garnish
Chives to garnish
INSTRUCTIONS:
Place the eggs in one layer in a sauce pan and fill with water until there is about 1-inch of water above them.
Heat on high until the water comes to a boil, then cover, turn the heat on low and cook for an additional minute.
Remove from the heat, cover and allow to sit for about 15 minutes.
Then run cold water over the eggs continuously for one minute.
Now, crack the eggs shells and peal carefully. Gently dry with paper towels.
Slice the eggs in half lengthwise, removing the yolks and putting them in a separate bowl, and placing the whites on a serving platter.
Mash the yolks with a fork and add the mayo, mustard, salt and pepper. You can add more or less ingredients to your preference. Mix well.
Now evenly disperse the yolk mixture into the egg whites and garnish with paprika and chives. Enjoy!
