Avocado Bruschetta Salad or Toast

Prep Time: 5 minutes | Yield: 1-2 servings

  • 3-4 organic large tomatoes

  • 1 organic avocado

  • 1 tbsp olive oil

  • 1 tsp balsamic vinegar

  • 2-3 organic garlic cloves, minced

  • 1/8 cup organic basil leaves

  • Sea salt and pepper to taste

  • Optional: French Bread, Udi's bread (gluten & dairy-free), or Barely Bread slices (grain & dairy-free)

  1. Toast bread (if using, if not, skip to step 2) and set aside.

  2. Chop and saute garlic for 1-2 min until slightly browned and fragrant. Set aside in a mixing bowl.

  3. Dice the tomatoes and avocado and roughly chop up the basil and add it all into the bowl with the garlic.

  4. Pour in the olive oil and balsamic vinegar and combine.

  5. Season with sea salt and pepper to taste.

  6. If making toast, I prefer to smash up the avocado and layer onto the toast first, then put the tomato/basil mix on top and enjoy!
