Prep Time: 5-7 minutes | Cooking Time: 10 minutes | Yield: 1 dozen cookies
2 cups cassava flour
1 cup cashew butter
1/3 melted coconut oil
1 tsp baking soda
3/4 cup maple syrup
2 organic cage-free eggs
1 tsp vanilla extract
Dash of sea salt
Preheat oven to 350F.
Whisk together all of the wet ingredients: cashew butter, coconut oil, maple syrup, eggs, and vanilla extract.
In a separate bowl, combine all dry ingredients: cassava flour, baking soda, and sea salt.
Slowly add the dry to the wet ingredients and combine well.
A large spoonful at a time, shape the dough into cookies using your hands and place on a lined baking sheet. Optional: use a fork to make the crisscross markings on top.
Bake for 10 minutes and enjoy!
