Cashew Butter Cookies



Prep Time: 5-7 minutes | Cooking Time: 10 minutes | Yield: 1 dozen cookies

INGREDIENTS:
  • 2 cups cassava flour

  • 1 cup cashew butter

  • 1/3 melted coconut oil

  • 1 tsp baking soda

  • 3/4 cup maple syrup

  • 2 organic cage-free eggs

  • 1 tsp vanilla extract

  • Dash of sea salt



INSTRUCTIONS:
  1. Preheat oven to 350F.

  2. Whisk together all of the wet ingredients: cashew butter, coconut oil, maple syrup, eggs, and vanilla extract.

  3. In a separate bowl, combine all dry ingredients: cassava flour, baking soda, and sea salt.

  4. Slowly add the dry to the wet ingredients and combine well.

  5. A large spoonful at a time, shape the dough into cookies using your hands and place on a lined baking sheet. Optional: use a fork to make the crisscross markings on top.

  6. Bake for 10 minutes and enjoy!
