Paleo Banana Bread

Prep Time: 5-7 minutes | Cooking Time: 40 minutes | Yield: 1 loaf

  • 3 ripe bananas (or "green-tipped" bananas for lower sugar content)

  • 2 organic, cage-free eggs

  • 1 tsp pure vanilla extract ​

  • 2 cups almond flour

  • 1/4 tsp sea salt

  • 2 tsp cinnamon

  • 1/4 tsp ground nutmeg

  • 1 tbsp baking powder

  • 2 scoops Vital Proteins collagen peptides (optional)

  • Avocado oil spray or equivalent

  • For the "icing": 2 tbsp coconut butter (1 tsp coconut oil if coconut butter is too dry).

  1. Preheat oven to 350F. Lightly spray a loaf pan with the avocado oil spray or equivalent.

  2. Blend all of the ingredients together and pour the batter into the loaf pan. Spread evenly and bake for 40-50 minutes or until the bread tests clean (using a toothpick or knife).

  3. To make the icing, heat up the coconut butter for about 10 seconds (no longer because it will burn!) If you find that the coconut butter is not melting (it's too dry), start over with some new coconut butter and add in the coconut oil. Heat them both and it should melt just fine - then drizzle it on top!

  4. Serve with butter or ghee. Enjoy!
