Creamy Avocado Dressing

Prep Time: 5 minutes | Yield: 1 cup

I don't know about you, but sometimes the dressing makes a salad for me - and this is one of those times.

Did you know that avocados contain more potassium than bananas? They are also loaded with healthy monounsaturated fats, which has been shown to lower heart disease!

So I guess what I'm saying is, this is an absolutely OK dressing to have in a little excess ;)

  • 1 large organic avocado

  • 1 clove garlic

  • 1/2 tbsp fresh lime juice

  • 3 tbsp EVOO

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/2 cup water

  1. Put all of the ingredients in a blender and mix well. If the dressing is too thick, add water 1 tbsp at a time until the desired consistency is reached. Enjoy!
