Basic Brunch



Prep Time: 5 minutes | Cooking Time: 20-25 minutes | Yield: 1 serving

I would have this meal over & over again, I can never get over it! I absolutely love breakfast food. Plus it's so simple, quick and easy, which is my motto ;)

INGREDIENTS:
  • 2 organic, cage-free eggs

  • 2-3 slices of organic, sugar-free bacon or turkey bacon

  • 1/2 cup sunrise medley potatoes

  • 1/4 avocado

  • 2 tbsp olive oil

  • Avocado oil spray

  • Sea salt, pepper and garlic salt to taste

INSTRUCTIONS:
  1. Preheat the oven to 375 degrees F.

  2. Rinse and dry the sunrise medley potatoes and then chop them up. Pour the olive oil over the potatoes and season with sea salt, pepper and garlic salt. Spread out on a baking sheet and bake for about 20 minutes or until they start to brown/crisp up.

  3. While the potatoes are baking, fry the bacon or turkey bacon with the avocado oil spray to your desired crispness. Set aside in paper towels to keep warm.

  4. Now cook the eggs, over medium and sprinkle with sea salt and pepper, also with the avocado oil spray.

  5. Now cut up the avocado, put on a plate with the baked potatoes, bacon and eggs and your set. Enjoy!
