Cauliflower Mash



Prep Time: 10 minutes | Cooking Time: 20 minutes | Yield: 4-6 servings

Want a quick and easy side dish that is low in carbs and nutrient dense? Cauliflower is a great substitute to many carbs, but I particularly like them mashed!

INGREDIENTS:
  • 1 medium-sized head of cauliflower

  • 4 tbsp butter, ghee, or coconut oil

  • Herbs & Spices:

  • ​1/4 cup rosemary

  • Sea salt, pepper and garlic salt to taste

INSTRUCTIONS:
  1. Chop the cauliflower into roughly 2-3 inch pieces.

  2. Steam the cauliflower until it is fork tender, then place it into a food processor. Add the butter/ghee/coconut oil, herbs and spices to taste.

  3. Puree until smooth and creamy.
